Spicy Coconut Soup (Mysore Rasam)
A spicy vegetarian / vegan soup, flavoured with tamarind and coconut.
Spice Blend –
- ½ cup Toor Dal cooked & mashed
- 1 tsp Lemon
- 1 tsp Tamarind Paste
- 1 Tomato chopped
- 1 tbsp Coconut
- 1 tsp Ghee
- 1 tsp Jaggery
• In a pan, heat the ghee over a medium flame. Add in all the spices, and carefully roast for 3 minutes. Add in the grated coconut and simmer for another minute before removing from the heat. Once cooled, grind into a powder.
• In a larger pan, add the tamarind, lemon juice, mashed tur dal, chopped tomato and the spice mixture - bring to a boil. Boil for a minute then reduce to a low flame. Cook at this temperature for 10 minutes. Take from the heat and finally add in the jaggery and cover with a lid.
• Let the soup rest for 5 minutes before serving, or until the soup has come together.
• Serve with steamed rice.
