Curried Red Lentils (Dal / Dahl)
Vegetarian dish consisting of lentils and pulses in a spiced sauce.
Spice Blend –
- 2 Onions finely chopped
- 2 Cloves of Garlic finely chopped
- 200 grams Spinach washed
- 200 grams Dried Red Lentils washed & dried
- 1 can Chopped Tomatoes
- 1 can Coconut Milk
- 500 ml Vegetable Stock
- 1 tsp Olive Oil
In a large skillet heat your oil over a medium flame. Add in the chopped onions and sauté for 5 minutes, until the just begin to brown. Add in your crushed, cumin, coriander and mustard. Letting them roast for a minute before adding in the remaining spices – cook for a further minute.
Add in the coconut milk, vegetable stock, tomatoes and red lentils. Cook a medium to low flame for 20 minutes, or until the sauce has reduced.
Just before serving add in the spinach and leave on a low flame until it wilts.
Serve with steamed rice.
